Halloween Cupcakes


Hi everyone!:D
Halloween is just round the corner, it's one of my favourite festival of all time lol
Going out tomorrow night as a zombie nurse;P I thought I'd share with you some halloween cupcakes I made yesterday with my flatmate, we made some horror(cute?) halloween cupcakes, they are hello kitty, minni mouse, mickey mouse, doraemon and dorami!

Caramel apple cupcakes



Ingredients (makes 9 cupcakes):
unsalted butter 100g
sugar 70g
eggs 2
plain flour 100g
baking powder 1 tsp
Apple 1 small one


Buttercream frosting:
unsalted butter 100g
sugar 65g
milk 1 tbsp

caramel 20g

Topping:

Almond flakes
caramel
icing sugar

Method:
1. Chop the apple into small pieces; Beat the butter and suage until thick and pale. Add one egg after another and beat well after each addition. Sieve in the cake flour and baking power, stir well.
2. Line the muffin tins with cupcake cases. Pour batter into the case up to 3/4 of their depth. Bake in a preheated oven at 180C for 20 minutes. Leave it to cool.
3. Beat the butter in a large bowl until soft and light. Add half of the sugar and beat until smooth.
4. Add the remaining sugar and one tablespoon of the milk and beat the mixture until creamy and smooth. Beat in the milk, if necessary, to loosen the mixture.
5. Stir in the caramel until well combined.
6. Fill a pipping bag fitted with a large open-star tip with frosting. Pipe frosting onto each cupcake in a spiral pattern.
7. Garnish with the toppings
8. Done!

Orange Cupcake



Quit my full time job on monday so I have plenty of time to bake now lol

Ingredients (makes 9 cupcakes):
unsalted butter 100g
sugar 70g
eggs 2
plain flour 100g
baking powder 1 tsp
Orange essence 1tsp

Cream cheese frosting:
cream cheese 200g
sugar 30g
Orange essence 1tsp




Method:
1. Beat the butter and suage until thick and pale. Add one egg after another and beat well after each addition. Sieve in the cake flour and baking power, stir well.
2. Line the muffin tins with cupcake cases. Pour batter into the case up to 3/4 of their depth. Bake in a preheated oven at 180C for 20 minutes. Leave it to cool.

3. Whisk the cream cheese, sugar and orange essence until stiff and smooth.
4. Fill a pipping bag fitted with a large open-star tip with frosting. Pipe frosting onto each cupcake in a spiral pattern.
5. Garnish with sugar pearls or anything you like.
6. Done!
