Chocolate Chiffon Cake

chiffon cake is a foam cake that gets most of its leavening from beaten egg whites, much like an angel food cake.

Chocolate Chiffon Cake
3 egg yolks
15g sugar
20g vegetable oil
30ml milk
35g cake flour
20g cocoa powder
3 egg whites
1/2 tsp lemon juice (omitted)
35g sugar

Method
1. Whisk egg yolks and sugar until the sugar dissolves.
2. Add in vegetable oil and whisk until well-mixed.
3. Sift cake flour and cocoa powder together. Add in, alternating with milk, in 2 batches. Whisk until batter is smooth and set aside.
4. In another bowl, whisk egg whites until foamy, then add in lemon juice and sugar (in 2 batches) and continue whisking until stiff peak form.
5. Fold in 1/3 of the egg white into the egg yolk batter (in step 3), then pour the batter into the remaining 2/3 egg white. Fold gently until well-mixed.
6. Pour the batter into a baking tin lined and greased at the base. Give the tin a few slight bangs on the table to knock out air in the batter. Bake in preheated oven at 180 deg C for 25 minutes
7. Remove from oven and invert the tin immediately onto a cooling rack. unmould after the cake has completely cooled.

Afternoon tea, Opus One at the Radisson Hotel, Manchester

I took my sister to opus one for afternoon tea to celebrate her birthday. The restaurant is very nice and posh. We sat at the window seat where we could see the street outside while having our afternoon tea. The ambience ws great with features a art collection and artefacts from the building's historic past. We ordered two traditional Afternoon Tea which included finger sandwiches, homemade scones served with clotted cream and beautiful cakesWe couldn't eat it all so took the rest home with two boxes they proved.

I enjoyed the afternoon tea, good service and great value. The only down side was cakes were a bit too sweet.

Afternoon tea, City Cafe, Manchester

City Cafe has 2 for 1 offer for afternoon tea since the royal wedding. It was a beautiful and sunny Sunday afternoon that I set out with my friend to the Mint Hotel. We traveled on foot as the hotel was only a ten minutes walk from city centre. It is a stylish and pleasantly decorated restaurant, with standard tables and garden outside. We would love to sit in the garden if the weather wasn't that windy.

We ordered two set of afternoon tea which included 2 scones, 3 cakes and 4 pieces of sandwich. The quality and portions of food were really good, however it may have been a bit too sweet and they didn't let us chose the seletion of cakes. I ordered earl grey tea for drink, the tea was served in white glass and teapot. One of the best Earl Grey teas I've ever had, it's only second to a select few exotic Earl Greys. Very bold, great smell and taste.

It really is a lovely place. relaxing atmosphere and very classy, it was an enjoyable experience.
