Pineapple Fried Rice
I'm pretty much a massive fan of pineapple, so the addition of it into any rice or noodle dish is most certainly welcome by me. Pineapple fried rice is Thai in origin, it is a delicious recipe made up of Pineapple, Egg, Onion, Green Onion with your choice of meat or prawns.
Onion, chopped 1/3 cup
Sesame oil 1 tbsp
Fish sauce 1tbsp
Egg, beaten 2
Salt 2 tsp
Curry powder 1tbsp
Salt 2 tsp
Curry powder 1tbsp
White pepper 1tsp
1. Slice the pineapple at 1/4 lengthwise, using a small sharp knife, scoop it out with icecream scoop. Do not pierce pineappleskin. Set pineapple shells aside. Cut half of pineapple in 1-inch chunks. Reserve remaining pineapple for another use.
2. In a wok, heat oil over high heat. Add garlic, green onion and onion, stir fry until you can smell the flavour. Add chicken, stir fry until almost cooked. Place them in a bowl, set aside.
3. Clean the work and heat oil over medium heat. In a bowl, beat eggs with some sesame oil, little bit of white pepper and 1tbp of salt. Add eggs to cook. When eggs are half cooked, add in the cooked rice, sprinkle with the remaining salt, sesame oil, white pepper, fish sauce and curry powder. Stir fry until it's combined.
4. Add in pineapple chunks and the chicken mixture. Stir fry for another 2 mintues.
5. Spoon the fried rice into pineapple shell. Bake 350F for 15 minutes.
